Famous Crab Stew

1 small onion, diced
4 tablespoons butter
2 (10 3/4 ounce) cans cream of celery soup
2 (10 3/4 ounce) cans cream of potato soup
1 quart half-and-half
1 pound crab claw meat
1 teaspoon white pepper
1/2 teaspoon salt
1/4 cup sherry, optional

Cook butter and onion in a large pot over nedium heat. Cook for about 4 minutes or until the onions sre translucent. Combine soups and half-and-half. Add to the onions. Add crabmeat. Season with salt and pepper. Continue cooking iver medium heat, stirring cinstantly until just before it boils. Serve immediately with a splash of sherry.
Yields: 8 to 10 servings
